A tasting menu is not a test. It is not a performance. It is, at its simplest, a sequence of dishes chosen by the kitchen, designed to be eaten in a particular order, at a particular pace. If you have never done one before, the idea can feel slightly intimidating. It should not. Here is what to expect.

How long does it take?

At Chanterelle Plus, the tasting menu runs to seven courses and takes between two and two and a half hours. That includes time between courses, which is intentional. The kitchen does not rush the pass, and the front-of-house team will not rush your table. If you have a hard finish time, mention it when you book and we will work around it. Most guests find that two and a half hours passes faster than they expect.

What about dietary restrictions?

The kitchen can accommodate most dietary requirements, including vegetarian, vegan, and gluten-free, provided we know at least 24 hours in advance. This is not a formality. A tasting menu built around a dietary restriction requires the kitchen to rethink several dishes entirely, and that takes time. The quality of the meal does not drop when we make these adjustments, but we need the notice to do it properly.

Should I add the wine pairing?

The wine pairing at Chanterelle Plus is R$ 195 per person and covers six pours, one for each savoury course. Rodrigo Alves selects the wines and will talk you through each one if you want. If you prefer not to drink alcohol, we offer a non-alcoholic pairing made from house ferments, cold infusions, and a couple of interesting juices. It is R$ 120 and worth trying even if you do drink wine.

What should I wear?

There is no dress code at Chanterelle Plus, but the dining room is quiet and the tables are well-spaced, so most guests dress accordingly. Smart casual is the norm. Nobody will turn you away for wearing jeans, but you might feel more comfortable in something a little more considered. The terrace on Friday evenings tends to be slightly more relaxed.

Can I choose my own dishes?

The tasting menu is a fixed sequence. If you prefer to choose your own dishes, the a la carte menu is available Tuesday through Saturday from 19h30. Several guests do both: they come for the tasting menu on a first visit to understand the kitchen's direction, then return for a la carte when they want to revisit a specific dish or explore the menu at their own pace.
